Ingredients

1 cup quinoa

2 cups water

1 cup shelled edamame (cooked)

1/4 cup red onion (finely chopped)

1/4 cup fresh cilantro (chopped)

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste


Instructions

1. 1. Rinse the quinoa under cold water.

2. 2. In a saucepan, combine quinoa and water, bring to a boil, then reduce heat and simmer for 15 minutes.
