Description

This Tricolor Potato Salad is a vibrant and delicious side dish that combines the flavors of red, yellow, and purple potatoes. Perfect for summer gatherings!


Ingredients

– 2 cups red potatoes, diced

– 2 cups yellow potatoes, diced

– 2 cups purple potatoes, diced

– 1/2 cup red onion, finely chopped

– 1/2 cup fresh parsley, chopped

– 1/3 cup olive oil

– 2 tablespoons Dijon mustard

– Salt and pepper to taste


Instructions

1. 1. Boil each type of potato separately in salted water until tender, about 10-15 minutes. Drain and let cool.

2. 2. In a large bowl, combine the cooled potatoes, red onion, and parsley.

3. 3. In a small bowl, whisk together olive oil, Dijon mustard, salt, and pepper.

4. 4. Pour the dressing over the potato mixture and toss gently to combine.
