Ingredients

1 can black-eyed peas, drained

1 cup diced red bell pepper

1/2 cup finely chopped red onion

1/2 cup corn kernels (fresh or frozen)

1/4 cup chopped fresh cilantro

2 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon cumin

Salt and pepper to taste


Instructions

1. In a large bowl, combine the black-eyed peas, red bell pepper, red onion, corn, and cilantro.

2. In a small bowl, whisk together the olive oil, apple cider vinegar, cumin, salt, and pepper.
