Ingredients

– 8 oz linguine or spaghetti, cooked and cooled

– 1 red bell pepper, diced

– 1 cup shredded carrots

– 3 green onions, sliced

– 1/2 cup roasted peanuts

– 1/4 cup chopped fresh cilantro

– 1/4 cup creamy peanut butter

– 3 tbsp soy sauce

– 2 tbsp rice vinegar

– 1 tbsp lime juice

– 1 tsp honey

– 1 tsp sesame oil

– 1/4 tsp red pepper flakes (optional)


Instructions

1. – Cook the pasta according to package instructions. Drain and rinse with cold water to cool completely.

2. – In a large bowl, combine the cooked pasta, bell pepper, carrots, green onions, peanuts, and cilantro.

3. – In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey, and sesame oil until smooth.

4. – Pour the dressing over the pasta salad and toss to coat evenly.

5. – Sprinkle with red pepper flakes, if desired.

6. – Chill for at least 30 minutes before serving to allow the flavors to blend.

Notes

– For a creamier dressing, add a tablespoon of water to the peanut butter mixture and whisk until smooth.
