Ingredients

– 8 oz rice noodles

– 1/2 cup creamy peanut butter

– 1/4 cup soy sauce

– 2 tbsp lime juice

– 1 tbsp brown sugar

– 1 tsp grated ginger

– 1 tsp red pepper flakes (optional)

– 2 cloves garlic, minced

– 1/4 cup water

– 2 cups shredded cooked chicken or tofu (optional)

– 1/4 cup chopped cilantro

– 2 tbsp crushed peanuts


Instructions

1. – Cook the rice noodles according to package instructions. Drain and set aside.

2. – In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, ginger, red pepper flakes (if using), and garlic. Add the water and stir until the sauce is smooth and well combined.

3. – Add the cooked noodles and chicken/tofu (if using) to the sauce and toss to coat evenly.

4. – Garnish with chopped cilantro and crushed peanuts.

5. – Serve immediately, while the noodles are hot and the flavors are at their peak.

Notes

– For a vegetarian option, use tofu instead of chicken.
