Ingredients

– 1 cup quinoa

– 2 cups water

– 1 bell pepper, diced

– 1 cucumber, diced

– 1 carrot, shredded

– 1/4 cup fresh cilantro, chopped

– 1/4 cup green onions, sliced

– 1/4 cup peanuts, chopped

– 3 tablespoons lime juice

– 2 tablespoons soy sauce

– 1 tablespoon sesame oil

– 1 teaspoon honey or agave

– Salt and pepper to taste


Instructions

1. – Rinse quinoa under cold water.

2. – In a pot, combine quinoa and water; bring to a boil.

3. – Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.

4. – In a large bowl, combine diced bell pepper, cucumber, carrot, cilantro, and green onions.

5. – In a small bowl, whisk together lime juice, soy sauce, sesame oil, honey, salt, and pepper.

6. – Add cooked quinoa to the vegetable mixture and pour dressing over it.

7. – Toss to combine and top with chopped peanuts before serving.

Notes

For added protein, consider adding chickpeas or grilled chicken. Store leftovers in an airtight container in the refrigerator for up to 3 days.
