Description

Ingredients

– 8 oz. linguine or spaghetti pasta

– 2 tbsp olive oil

– 3 cloves garlic, minced

– 1 lb. fresh strawberries, hulled and sliced

– 1/4 cup balsamic vinegar

– 1/4 cup freshly grated Parmesan cheese

– 1/4 cup fresh basil leaves, torn

– Salt and pepper to taste


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

3. 3. Add the sliced strawberries and balsamic vinegar to the skillet. Cook for 3-5 minutes, stirring occasionally, until the strawberries are slightly softened and the balsamic has reduced.

4. 4. Add the cooked pasta to the skillet and toss to coat everything evenly in the strawberry balsamic mixture.

5. 5. Remove from heat and stir in the Parmesan cheese and torn basil leaves. Season with salt and pepper to taste.

6. 6. Serve the Strawberry Balsamic Pasta warm, garnished with additional basil leaves if desired.

Notes

For a creamier texture, you can add a splash of heavy cream or half-and-half to the pasta before serving. This dish can also be served chilled as a pasta salad.
