Description

Ingredients

– 1 lb boneless, skinless chicken breasts

– 1 cup coconut milk

– 2 tbsp lime juice

– 1 tsp ground cumin

– 1 tsp chili powder

– 1 tsp garlic powder

– 1 tsp ground coriander

– 1/2 tsp cayenne pepper

– 1/2 tsp salt

– 1/4 tsp black pepper

– 2 tbsp fresh cilantro, chopped


Instructions

1. – In a large resealable bag, combine the coconut milk, lime juice, cumin, chili powder, garlic powder, coriander, cayenne, salt, and pepper. Add the chicken and toss to coat.

2. – Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours.

3. – Preheat your grill to medium-high heat.

4. – Remove the chicken from the marinade and discard the marinade.

5. – Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F.

6. – Transfer the grilled chicken to a serving plate and sprinkle with the chopped cilantro.

7. – Serve immediately and enjoy!

Notes

– For extra flavor, you can also grill the chicken over indirect heat for 15-20 minutes, flipping halfway through.

– Adjust the spice level by adding more or less cayenne pepper to suit your preferences.

– Leftover chicken can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
