Ingredients
2 lbs baby potatoes
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/4 cup red onion, diced
1/4 cup fresh parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
1. 1. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
2. 2. Drain the potatoes and let them cool, then cut them into halves or quarters.
3. 3. In a large bowl, combine the potatoes, cherry tomatoes, olives, red onion, and parsley.
4. 4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

Notes
