Ingredients

– 2 cups shredded rotisserie chicken

– 1 package (20 oz) cheese tortellini

– 1 onion, diced

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 3 garlic cloves, minced

– 4 cups chicken broth

– 2 cups water

– 1 teaspoon dried thyme

– 1/2 teaspoon dried oregano

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. – In a large pot or Dutch oven, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.

2. – Add the garlic and cook for 1 minute, until fragrant.

3. – Pour in the chicken broth and water. Bring the mixture to a boil.

4. – Add the tortellini and shredded rotisserie chicken. Reduce the heat and simmer for 10-12 minutes, or until the tortellini is cooked through.

5. – Stir in the dried thyme and oregano. Season with salt and black pepper to taste.

6. – Ladle the soup into bowls and garnish with fresh chopped parsley.

Notes

– You can use any type of cheese tortellini, fresh or frozen.

– Adjust the seasoning to your liking, adding more herbs or spices if desired.

– For a thicker soup, you can puree a portion of the vegetables before adding the broth.
