Description

Ingredients

– 2 medium sweet potatoes, peeled and diced

– 4 cups mixed greens (spinach, arugula, kale)

– 1/2 cup red onion, thinly sliced

– 1/4 cup walnuts, chopped

– 1/4 cup feta cheese, crumbled (optional)

– 3 tablespoons olive oil

– 2 tablespoons balsamic vinegar

– Salt and pepper to taste


Instructions

1. 1. Preheat your oven to 400°F (200°C).

2. 2. Toss the diced sweet potatoes with 2 tablespoons of olive oil, salt, and pepper.

3. 3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
