Description

This Red, White and Blue Icebox Cake is a delightful no-bake dessert perfect for summer gatherings. Layers of creamy goodness and fresh berries make each bite a celebration of flavor!


Ingredients

– 2 cups heavy whipping cream

– 1 cup powdered sugar

– 1 teaspoon vanilla extract

– 1 package (14 oz) graham crackers

– 2 cups strawberries, sliced

– 2 cups blueberries

– Fresh mint leaves for garnish (optional)


Instructions

1. 1. In a large bowl, whip the heavy cream until soft peaks form.

2. 2. Gradually add the powdered sugar and vanilla, continuing to whip until stiff peaks form.

3. 3. In a 9×13 inch dish, layer graham crackers at the bottom.

4. 4. Spread a layer of whipped cream over the crackers.

5. 5. Add a layer of sliced strawberries and blueberries.

6. 6. Repeat the layers until you run out of ingredients, finishing with whipped cream on top.

7. 7. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.

8. 8. Serve chilled, garnished with fresh mint if desired.

Notes

For a lighter version, use reduced-fat cream cheese in the whipped cream. This cake can be stored in the refrigerator for up to 3 days.
