Description

Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup fresh raspberries, gently mashed


Instructions

1. – Preheat your oven to 350°F (175°C).

2. – In a large bowl, cream together the softened butter and sugar until light and fluffy.

3. – Beat in the egg and vanilla extract until well combined.

4. – In a separate bowl, whisk together the flour, baking powder, and salt.

5. – Gradually add the dry ingredients to the wet mixture, mixing until just combined.

6. – Fold in the mashed raspberries gently to avoid breaking them too much.

7. – Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.

8. – Bake for 12-15 minutes or until the edges are lightly golden.

9. – Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
