Ingredients
– 1 cup shelled edamame
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– 1 garlic clove, minced
– Salt and pepper to taste
– Fresh herbs (basil or dill) for garnish
Instructions
1. – Cook the edamame in boiling water for 3-5 minutes until tender.
2. – Drain and rinse under cold water.
3. – In a food processor, combine edamame, olive oil, lemon juice, and garlic.
4. – Blend until smooth, adding salt and pepper to taste.
5. – Transfer to a serving bowl, garnish with fresh herbs, and serve chilled.
Notes
