Ingredients
– 1 cup uncooked orzo pasta
– 2 cups low-sodium vegetable broth
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 cup broccoli florets
– 1 red bell pepper, diced
– 1 cup cherry tomatoes, halved
– 1/2 cup frozen peas
– 1/2 cup grated Parmesan cheese
– 1/4 cup heavy cream
– 1 teaspoon dried basil
– Salt and pepper to taste
Instructions
1. – Preheat your oven to 375°F (190°C).
2. – In a large oven-safe skillet or baking dish, combine the uncooked orzo and vegetable broth. Cover and bake for 15-20 minutes, or until the orzo is tender and has absorbed most of the liquid.
3. – In a separate skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.
4. – Add the broccoli florets, diced red bell pepper, and cherry tomatoes to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender.
5. – Stir the sautéed vegetables, frozen peas, Parmesan cheese, heavy cream, and dried basil into the baked orzo. Season with salt and pepper to taste.
6. – Return the skillet or baking dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and the dish is heated through.
