These Peaches and Cream Cookies are a delightful blend of sweet peaches and creamy goodness, offering a soft and chewy texture that’s perfect for summer snacking.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup fresh peaches, peeled and diced
½ cup white chocolate chips (optional)
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
3. 3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. 4. In a separate bowl, whisk together the flour, baking soda, and salt.
5. 5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. 6. Fold in the diced peaches and white chocolate chips, if using.
7. 7. Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
