Description

This vibrant Mediterranean Orzo Salad is a delightful and refreshing summer dish, bursting with the flavors of the Mediterranean. Tender orzo pasta is tossed with colorful vegetables, tangy feta, and a zesty dressing for a satisfying and healthy meal or side.


Ingredients

– 1 cup uncooked orzo pasta

– 1 cup cherry tomatoes, halved

– 1 cucumber, diced

– 1/2 red onion, thinly sliced

– 1/2 cup crumbled feta cheese

– 1/4 cup chopped fresh parsley

– 2 tablespoons olive oil

– 2 tablespoons red wine vinegar

– 1 tablespoon lemon juice

– 1 garlic clove, minced

– 1/2 teaspoon dried oregano

– Salt and pepper to taste


Instructions

1. – Cook the orzo according to package instructions. Drain and rinse with cold water to cool.

2. – In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, feta, and parsley.

3. – In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic, and oregano. Season with salt and pepper.

4. – Pour the dressing over the orzo salad and toss gently to coat.

5. – Refrigerate for at least 30 minutes to allow the flavors to meld.

6. – Serve chilled or at room temperature.

Notes
