Ingredients

– 1 lb flank steak

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 1 red onion, sliced

– 1 cup cherry tomatoes, halved

– 1 cup cooked quinoa

– 2 tbsp olive oil

– 2 tbsp red wine vinegar

– 1 tbsp lemon juice

– 1 tsp dried oregano

Instructions

1. – Marinate the flank steak in a mixture of olive oil, red wine vinegar, lemon juice, oregano, and basil for 30 minutes to 1 hour.

2. – Heat a large skillet or grill pan over medium-high heat. Cook the steak for 3-4 minutes per side, until it reaches your desired doneness.

3. – Remove the steak from the heat and let it rest for 5 minutes before slicing it against the grain.

4. – In a large bowl, combine the sliced bell peppers, onion, and cherry tomatoes.

5. – Add the cooked quinoa and the sliced steak to the bowl.

6. – Drizzle the remaining marinade over the top and toss everything together.

7. – Season with salt and pepper to taste.

8. – Serve the Mediterranean Flank Steak Bowls immediately, garnished with extra herbs if desired.

Notes

– For a creamier dressing, you can add a tablespoon of Greek yogurt to the marinade.

– Feel free to swap in your favorite vegetables or grains to customize the bowls.

– This dish can be prepared in advance and refrigerated for up to 3 days.
