Description

Ingredients

1 can black beans, drained and rinsed

1 can corn, drained

1 cup cherry tomatoes, diced

1 bell pepper, diced

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup olive oil

Juice of 1 lime

Salt and pepper to taste


Instructions

1. 1. In a large mixing bowl, combine black beans, corn, diced cherry tomatoes, bell pepper, and red onion.

2. 2. Add chopped parsley, olive oil, lime juice, salt, and pepper.

3. 3. Stir the mixture gently until well combined.

4. 4. Taste and adjust seasoning as needed.
