Description

Magic Spice Cucumber Salad is a refreshing, tangy side dish that combines crisp cucumber slices with aromatic Asian-inspired spices. This vibrant salad comes together in just 10 minutes, making it perfect for weeknight dinners, potlucks, and summer gatherings. The perfect balance of heat, sweetness, and acidity makes every bite absolutely irresistible.

Ingredients

4 large English cucumbers, thinly sliced

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon honey

2 teaspoons sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon red chili flakes

2 teaspoons sesame seeds

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Slice cucumbers into thin rounds using a mandoline or sharp knife, and place in a large mixing bowl.

2. In a small bowl, whisk together rice vinegar, soy sauce, honey, and sesame oil until well combined.

3. Add minced garlic and ginger to the dressing and stir thoroughly to incorporate.

4. Pour the dressing over the cucumber slices and toss gently but thoroughly to coat evenly.

5. Sprinkle red chili flakes, sesame seeds, and fresh cilantro over the top.

6. Squeeze fresh lime juice over the salad and season with salt and pepper to taste.

7. Let the salad sit for 5 minutes to allow flavors to meld before serving.

8. Serve chilled or at room temperature as a side dish or refreshing appetizer.

Notes

For best results, slice cucumbers just before serving to maintain crispness. This salad can be made up to 2 hours in advance—just add fresh cilantro and lime juice right before serving. For extra heat, increase red chili flakes or add sliced fresh Thai chilies. You can also add diced red onion for additional crunch and sharpness. This recipe is naturally vegetarian and vegan-friendly. Store leftovers in an airtight container in the refrigerator for up to 1 day.
