Description

This Lemon Icebox Pie is a light and refreshing dessert that combines the tartness of fresh lemons with a creamy filling, all nestled in a buttery graham cracker crust. Perfect for warm days and easy to prepare!


Ingredients

1 cup graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

1 (8 oz) package cream cheese, softened

1 cup sweetened condensed milk

1/2 cup fresh lemon juice

1 tablespoon lemon zest

1/2 teaspoon vanilla extract

1/4 cup whipped cream (optional, for topping)


Instructions

1. 1. Preheat your oven to 350°F (175°C).

2. 2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.

3. 3. Press the mixture into the bottom of a pie dish to form the crust.

4. 4. Bake the crust for 8-10 minutes until lightly golden, then let cool.

5. 5. In a mixing bowl, beat the softened cream cheese until smooth.

6. 6. Gradually add sweetened condensed milk, mixing until well incorporated.

7. 7. Stir in lemon juice, lemon zest, and vanilla extract until smooth.
