Ingredients

– 1 lb boneless, skinless chicken thighs, cut into 1-inch cubes

– 1/4 cup soy sauce

– 2 tablespoons brown sugar

– 2 cloves garlic, minced

– 1 teaspoon grated fresh ginger

– 1/4 cup thinly sliced scallions

– 2 tablespoons sesame seeds

– Wooden skewers, soaked in water for 30 minutes


Instructions

1. – In a large bowl, combine the cubed chicken, soy sauce, brown sugar, garlic, and ginger. Toss to coat the chicken evenly. Cover and marinate in the refrigerator for 30 minutes to 1 hour.

2. – Preheat grill or grill pan to medium-high heat.

3. – Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece.

4. – Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.

5. – Transfer the grilled skewers to a serving platter and garnish with sliced scallions and sesame seeds.

6. – Serve warm, with your favorite dipping sauce on the side.

Notes

– For a smoky flavor, you can also brush the skewers with a bit of sesame oil or gochujang (Korean chili paste) before grilling.

– Leftover skewers can be stored in the refrigerator for up to 3 days and reheated in the oven or on the grill.
