Description

This Kielbasa Black Bean Skillet is a quick and satisfying one-pot meal that’s packed with smoky sausage, protein-rich black beans, and vibrant flavors. It’s perfect for a weeknight dinner or a casual gathering with friends and family.


Ingredients

– 1 lb kielbasa sausage, sliced

– 1 onion, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) black beans, drained and rinsed

– 1 can (15 oz) diced tomatoes

– 1 tsp chili powder

– 1 tsp cumin

– 1/2 tsp smoked paprika

– Salt and pepper to taste

– Chopped fresh parsley for garnish (optional)


Instructions

1. 1. Heat a large skillet over medium-high heat. Add the sliced kielbasa and cook until browned on both sides, about 5 minutes. Remove the sausage from the skillet and set aside.

2. 2. In the same skillet, add the diced onion and bell pepper. Sauté until the vegetables are softened, about 5 minutes.

3. 3. Add the minced garlic and cook for an additional minute, until fragrant.

4. 4. Stir in the black beans, diced tomatoes, chili powder, cumin, and smoked paprika. Season with salt and pepper to taste.

5. 5. Reduce the heat to medium-low and simmer the mixture for 10-15 minutes, stirring occasionally, until the flavors have melded together.

6. 6. Add the cooked kielbasa back to the skillet and stir to combine.

7. 7. Serve the Kielbasa Black Bean Skillet hot, garnished with chopped fresh parsley if desired. Enjoy!

Notes

This dish can be easily customized to your liking. Feel free to add additional vegetables, such as diced zucchini or corn. For a spicier version, add a diced jalapeño or use hot Italian sausage instead of kielbasa.
