Ingredients

– 4 chicken thighs (bone-in, skin-on)

– 2 tablespoons olive oil

– 2 tablespoons brown sugar

– 1 tablespoon soy sauce

– 1 tablespoon lime juice

– 2 teaspoons allspice

– 1 teaspoon thyme

– 1 teaspoon cinnamon

– 1/2 teaspoon nutmeg

– 1/2 teaspoon cayenne pepper

– 4 garlic cloves (minced)

– 1 inch ginger (grated)

– Salt and pepper to taste


Instructions

1. 1. In a bowl, combine olive oil, brown sugar, soy sauce, lime juice, allspice, thyme, cinnamon, nutmeg, cayenne, garlic, ginger, salt, and pepper.

2. 2. Place chicken thighs in a resealable bag and pour marinade over them, ensuring they are well coated.

3. 3. Seal the bag and refrigerate for at least 2 hours or overnight for best flavor.

4. 4. Preheat the grill to medium-high heat.

5. 5. Remove chicken from marinade and discard excess marinade.

6. 6. Grill chicken for about 6-8 minutes per side or until internal temperature reaches 165°F (75°C).

7. 7. Let the chicken rest for 5 minutes before serving.

Notes

For added flavor, you can smoke the chicken on the grill or bake it in the oven. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
