Description
Tender, juicy chicken breasts infused with the bold, aromatic flavors of North African harissa spice. This quick and easy grilled chicken dish is perfect for weeknight dinners or summer barbecues.
Ingredients
– 4 boneless, skinless chicken breasts
– 3 tbsp harissa paste
– 2 tbsp olive oil
– 1 lemon, juiced
– 3 garlic cloves, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. – In a large resealable bag or shallow dish, combine the harissa paste, olive oil, lemon juice, garlic, cumin, paprika, salt, and pepper. Add the chicken breasts and turn to coat evenly in the marinade.
2. – Cover and refrigerate for at least 30 minutes, or up to 8 hours.
3. – Preheat grill to medium-high heat. Grill the chicken for 5-7 minutes per side, or until cooked through and the internal temperature reaches 165°F.
4. – Let the chicken rest for 5 minutes before serving. Enjoy hot off the grill!
Notes
For extra flavor, you can baste the chicken with the remaining marinade while grilling. Serve with a fresh salad, roasted vegetables, or grilled lemon wedges.
