Ingredients

– 4 salmon fillets

– 4 ears of corn, shucked

– 1/2 cup mayonnaise

– 1 lime, juiced

– 1 teaspoon chili powder

– 1/2 teaspoon cumin

– 1/4 cup crumbled Cotija cheese

– 2 tablespoons chopped cilantro


Instructions

1. 1. Preheat grill to medium-high heat.

2. 2. Season the salmon fillets with salt and pepper.

3. 3. Grill the salmon for 4-6 minutes per side, or until cooked through.

4. 4. Grill the corn, turning occasionally, until charred and tender, about 10-12 minutes.

5. 5. In a bowl, mix the mayonnaise, lime juice, chili powder, and cumin.

6. 6. Cut the grilled corn kernels off the cob and add them to the mayonnaise mixture. Stir to coat.
