Ingredients
– 1 lb boneless, skinless chicken breasts
– 2 bell peppers, sliced
– 1 red onion, sliced
– 2 tbsp olive oil
– 2 tsp fajita seasoning
– 1 head romaine lettuce, chopped
– 1 avocado, diced
– 1/4 cup crumbled queso fresco
– 2 tbsp fresh cilantro, chopped
– Juice of 1 lime
– Salt and pepper to taste
Instructions
1. – Preheat grill to medium-high heat.
2. – Season the chicken breasts with the fajita seasoning and a pinch of salt and pepper.
3. – Grill the chicken for 6-8 minutes per side, or until cooked through. Set aside and let rest for 5 minutes, then slice or shred.
4. – In a large skillet, heat the olive oil over medium-high heat. Add the sliced bell peppers and onions and sauté for 5-7 minutes, until tender and slightly charred.
5. – In a large salad bowl, combine the chopped romaine lettuce, grilled chicken, sautéed vegetables, avocado, queso fresco, and cilantro.
6. – Drizzle the salad with the lime juice and toss to coat. Season with additional salt and pepper to taste.
7. – Serve the Grilled Chicken Fajita Salad immediately, while the chicken and veggies are still warm.
Notes
For extra flavor, marinate the chicken in a mixture of lime juice, olive oil, and fajita seasoning for 30 minutes before grilling. You can also add other toppings like diced tomatoes, black beans, or shredded cheese.
