Ingredients

2 ears of corn, husked and cut into ribs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

1/2 cup barbecue sauce

Instructions

1. Preheat your grill to medium heat.

2. Cut each corn ear into quarters to create the ‘ribs.’

3. In a mixing bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper.

4. Brush the corn ribs with the olive oil mixture.

5. Place the corn ribs on the grill and cook for 10-12 minutes, turning occasionally until charred.

6. Brush with barbecue sauce during the last few minutes of grilling.

7. Serve hot, garnished with fresh herbs if desired.

Notes

For extra flavor, marinate the corn in the olive oil mixture for 30 minutes before grilling. Store leftovers in an airtight container in the fridge for up to 2 days.
