Ingredients

2 English cucumbers, thinly sliced

1 ripe avocado

1/2 cup fresh basil leaves

1/4 cup fresh dill

1/4 cup fresh parsley leaves

1/2 cup Greek yogurt

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1/4 cup olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

2 tablespoons sunflower seeds or pumpkin seeds (optional garnish)

Fresh edible flowers for garnish (optional)


Instructions

1. Add avocado, fresh basil, dill, parsley, and garlic to a food processor or blender

2. Blend until smooth and creamy, about 30-45 seconds

3. Add Greek yogurt, lemon juice, and olive oil to the herb mixture

4. Blend again until well combined and creamy

5. Season with salt, pepper, and red pepper flakes to taste

6. Place thinly sliced cucumbers in a large mixing bowl

7. Pour the green goddess dressing over the cucumbers

8. Gently toss until all cucumber slices are coated evenly

9. Transfer to a serving bowl or platter

10. Garnish with sunflower seeds, fresh herbs, or edible flowers if desired

11. Serve immediately or chill for up to 2 hours before serving

Notes

For best results, slice cucumbers no more than 2 hours before serving to maintain crispness. If making ahead, store the dressing and cucumbers separately and combine just before serving.
