Description

Ingredients

– 1 package (19 oz) cheese tortellini

– 1 cup cherry tomatoes, halved

– 1 cucumber, diced

– 1 cup pitted Kalamata olives, halved

– 1/2 red onion, thinly sliced

– 1 cup crumbled feta cheese

– 1/4 cup fresh chopped parsley

– 1/4 cup fresh chopped basil


Instructions

1. 1. Cook the tortellini according to package instructions. Drain and rinse under cold water to cool completely.

2. 2. In a large bowl, combine the cooked and cooled tortellini, cherry tomatoes, cucumber, olives, red onion, feta cheese, parsley, and basil.

3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, and dried oregano. Season with salt and pepper to taste.

4. 4. Pour the dressing over the tortellini salad and toss gently to coat.

5. 5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

6. 6. Serve chilled or at room temperature.

Notes
