Description

This German Potato & Cucumber Salad combines tender potatoes and crisp cucumbers in a tangy dressing, creating a refreshing side dish for any meal. Perfect for summer picnics or barbecues!


Ingredients

– 2 lbs small waxy potatoes

– 1 cucumber, thinly sliced

– 1 small red onion, finely chopped

– 1 cup sour cream

– 2 tbsp white vinegar

– 1 tbsp Dijon mustard

– Salt and pepper to taste

– Fresh dill for garnish


Instructions

1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes.
