Description

Enjoy a creamy and flavorful French Potato Salad that’s perfect for summer gatherings, picnics, or barbecues. This classic dish combines tender potatoes with a delicious dressing and fresh herbs for a refreshing side.


Ingredients

– 2 lbs baby potatoes

– 1/2 cup mayonnaise

– 2 tbsp Dijon mustard

– 1/4 cup red onion, finely chopped

– 1/4 cup celery, diced

– 1/4 cup fresh parsley, chopped

– Salt and pepper to taste


Instructions

1. 1. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.

2. 2. Drain and let cool before cutting them into halves or quarters.

3. 3. In a large bowl, mix mayonnaise, Dijon mustard, red onion, celery, parsley, salt, and pepper.

4. 4. Add the cooled potatoes to the dressing and gently toss to coat.

5. 5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For added flavor, you can mix in capers or substitute Greek yogurt for half the mayonnaise. Store leftovers in an airtight container for up to 3 days.
