Description

Ingredients

– 8 oz elbow macaroni

– 1 cup cherry tomatoes, halved

– 1 cup cucumber, diced

– 1/2 cup red onion, thinly sliced

– 1/2 cup bell pepper, diced

– 1/4 cup fresh basil, chopped

– 1/4 cup olive oil

– 2 tbsp red wine vinegar

– 1 tsp Dijon mustard

– 1 tsp honey

– Salt and pepper to taste


Instructions

1. – Cook the elbow macaroni according to package instructions. Drain and rinse with cold water to cool.

2. – In a large bowl, combine the cooked and cooled macaroni, cherry tomatoes, cucumber, red onion, bell pepper, and fresh basil.

3. – In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and honey. Season with salt and pepper.

4. – Pour the dressing over the pasta salad and toss gently to coat.

5. – Chill the pasta salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

6. – Serve chilled and enjoy!

Notes

For added protein, you can also add grilled chicken or chickpeas to this pasta salad. It’s also delicious with feta cheese or olives.
