Ingredients

– 6 large eggs

– 1/4 cup mayonnaise

– 1 teaspoon Dijon mustard

– Salt and pepper to taste

– Red bell pepper, diced

– Blue cheese or blue food coloring

– Fresh parsley for garnish

Instructions

1. 1. Hard boil the eggs and allow them to cool completely.

2. 2. Peel the eggs and cut them in half lengthwise.

3. 3. Remove the yolks and place them in a bowl.

4. 4. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.

5. 5. Divide the mixture into two bowls; color one with blue food coloring or mix in blue cheese.

6. 6. Use a piping bag to fill half of the egg white halves with the yellow yolk mixture and the other half with the blue mixture.

7. 7. Top the blue-filled eggs with diced red bell pepper to resemble the flag.

8. 8. Arrange eggs on a platter in the shape of the American flag.

Notes

For a spicier kick, add a dash of hot sauce to the yolk mixture. Store leftovers in the refrigerator for up to 2 days.
