This Creole Potato Salad is a delightful twist on the classic, combining creamy potatoes with zesty spices and fresh vegetables for a refreshing side dish. Perfect for summer picnics and BBQs!
Ingredients
– 2 pounds of potatoes, peeled and diced
– 1 cup mayonnaise
– 2 tablespoons Dijon mustard
– 1 tablespoon apple cider vinegar
– 1 cup diced celery
– 1 cup diced bell peppers (red and green)
– 1/2 cup finely chopped red onion
– 1 teaspoon Creole seasoning
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions
1. 1. Boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
2. 2. In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, Creole seasoning, salt, and pepper.
3. 3. Add the cooled potatoes, celery, bell peppers, and onion to the bowl and gently fold until well combined.
4. 4. Taste and adjust seasoning as needed.
5. 5. Chill in the refrigerator for at least 1 hour before serving.
6. 6. Garnish with fresh parsley before serving.
Notes
For a lighter version, substitute Greek yogurt for half of the mayonnaise. This salad can be made a day in advance and stored in the refrigerator.
