Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1 cup shredded coconut
– 1 cup chopped pecans
– 1 teaspoon baking powder
– 1/2 teaspoon salt
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
3. 3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. 4. In a separate bowl, combine flour, baking powder, and salt. Gradually add this to the creamed mixture.
5. 5. Fold in the shredded coconut and chopped pecans until evenly distributed.
6. 6. Drop spoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart.
7. 7. Bake for 10-12 minutes or until the edges are lightly golden.
