Description

Creamy, tangy, and full of flavor, this Classic Southern Potato Salad is the ultimate side dish for picnics, barbecues, and family gatherings. With tender potatoes and crunchy veggies, it’s a crowd-pleaser!


Ingredients

2 lbs potatoes, peeled and cubed

1 cup mayonnaise

1 tablespoon Dijon mustard

2 tablespoons apple cider vinegar

1 cup celery, diced

1/2 cup red onion, finely chopped

1/4 cup sweet pickle relish

Salt and pepper to taste

Fresh parsley for garnish


Instructions

1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.

2. 2. In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

3. 3. Add the cooled potatoes, celery, red onion, and pickle relish to the bowl.

Notes
