Description

Chipotle Tofu and Pineapple Skewers are a delicious and vibrant dish that combines the smoky flavor of chipotle marinated tofu with sweet, juicy pineapple. Perfect for summer grilling or a quick weeknight dinner!


Ingredients

– 1 block firm tofu, drained and pressed

– 1 cup pineapple chunks, fresh or canned

– 1 red bell pepper, cut into squares

– 1 green bell pepper, cut into squares

– 3 tablespoons chipotle sauce

– 2 tablespoons olive oil

– Salt and pepper to taste

– Skewers (wooden or metal)


Instructions

1. 1. Preheat the grill to medium-high heat.

2. 2. In a bowl, mix chipotle sauce, olive oil, salt, and pepper.

3. 3. Cut the tofu into cubes and marinate in the chipotle mixture for at least 15 minutes.

4. 4. Thread tofu, pineapple, and bell pepper onto skewers, alternating ingredients.

5. 5. Grill skewers for 10-12 minutes, turning occasionally until charred.

6. 6. Serve hot, garnished with fresh herbs if desired.

Notes

For added flavor, let the tofu marinate overnight. You can also add other vegetables like zucchini or mushrooms. Store leftovers in an airtight container in the fridge for up to 3 days.
