This Chimichurri Chicken Salad is a flavor-packed, refreshing dish that’s perfect for a quick and healthy lunch or dinner. The bright, herbal chimichurri dressing complements the juicy chicken and crisp greens for a truly delightful experience.
Ingredients
– 1 lb boneless, skinless chicken breasts
– 1 cup packed fresh parsley
– 1/2 cup packed fresh cilantro
– 3 cloves garlic
– 1/4 cup olive oil
– 2 tbsp red wine vinegar
– 1 tsp red pepper flakes
– Salt and pepper to taste
– 6 cups mixed greens
– 1 cup cherry tomatoes, halved
– 1/2 red onion, thinly sliced
Instructions
1. 1. Grill or bake the chicken breasts until cooked through. Allow to cool, then shred or dice the chicken.
2. 2. In a food processor, combine the parsley, cilantro, garlic, olive oil, red wine vinegar, and red pepper flakes. Pulse until a smooth chimichurri sauce forms. Season with salt and pepper to taste.
3. 3. In a large salad bowl, toss the shredded chicken, mixed greens, cherry tomatoes, and red onion. Drizzle the chimichurri dressing over the salad and toss to coat evenly.

Notes
