Description

Chicken Caesar (Roasted Thighs) is a show-stopping weeknight dinner featuring succulent bone-in chicken thighs with crispy golden skin, roasted to perfection with bold Caesar seasonings. Ingredients

6 bone-in, skin-on chicken thighs (about 2.5 lbs)

3 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon anchovy paste

1/4 cup freshly grated Parmesan cheese

2 teaspoons fresh lemon juice

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1/2 teaspoon paprika

Salt and freshly ground black pepper to taste

1/4 teaspoon red pepper flakes

Fresh parsley for garnish

Shaved Parmesan for serving

Croutons for serving

Lemon wedges for serving


Instructions

1. Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly oil it.

2. In a small bowl, whisk together olive oil, minced garlic, Dijon mustard, Worcestershire sauce, anchovy paste, grated Parmesan, lemon juice, oregano, thyme, paprika, salt, pepper, and red pepper flakes until well combined.

3. Pat chicken thighs dry with paper towels to ensure crispy skin.

4. Place chicken thighs skin-side up on the prepared sheet pan.

5. Rub the Caesar herb mixture evenly over each chicken thigh, making sure to coat both sides and get some under the skin if possible.

6. Roast in the preheated oven for 35-40 minutes, until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer at the thickest part of the thigh.

7. Remove from oven and let rest for 5 minutes before serving.

8. Garnish with fresh parsley, shaved Parmesan cheese, and croutons.

9. Serve with fresh Caesar salad, lemon wedges, and your favorite sides.

Notes

For extra flavor, marinate the chicken in the Caesar mixture for 2-4 hours before roasting. You can also prepare the Caesar mixture the night before and store in the refrigerator. For a lower-fat option, remove the skin before eating. Leftover roasted thighs make excellent salad toppings or can be shredded for Caesar chicken sandwiches. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a 350°F oven to maintain juiciness.
