Ingredients
– 1 cup dry couscous
– 1 pint cherry tomatoes, halved
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1/4 cup fresh basil, chopped
– Salt and pepper to taste
Instructions
1. 1. Bring 1 cup of water to a boil in a medium saucepan. Add the couscous, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork.
2. 2. In a skillet, heat the olive oil over medium heat. Add the cherry tomatoes and garlic and sauté for 3-5 minutes, until the tomatoes start to soften and release their juices.
3. 3. Add the cooked couscous to the skillet and toss to combine. Season with salt and pepper to taste.
