Ingredients
– 8 oz penne pasta
– 2 cups broccoli florets
– 2 cloves garlic, minced
– 1/2 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 tbsp lemon juice
– 1 tsp Dijon mustard
– 1/4 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente.
2. 2. In a large skillet, sauté the broccoli florets in a little olive oil over medium heat until tender, about 5-7 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
3. 3. In a small bowl, whisk together the heavy cream, Parmesan cheese, lemon juice, Dijon mustard, salt, and black pepper to create the Caesar-style sauce.
4. 4. Drain the cooked pasta and add it to the skillet with the broccoli. Pour the creamy Caesar sauce over the pasta and broccoli, and toss to combine.
5. 5. Serve the Broccoli Caesar Pasta hot, garnished with additional Parmesan cheese and freshly cracked black pepper, if desired.
Notes
For a heartier meal, you can add grilled chicken or shrimp to the dish. The leftovers also make a great lunch the next day.
