This Broccoli Caesar Pasta Salad is a delightful blend of fresh broccoli and rotini pasta tossed in a creamy Caesar dressing. It’s a perfect side or main dish for picnics, potlucks, or quick weeknight dinners.
Ingredients
– 2 cups rotini pasta
– 2 cups broccoli florets
– 1 cup Caesar dressing
– 1/2 cup grated parmesan cheese
– 1 cup croutons
– Salt and pepper to taste
Instructions
1. 1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
2. 2. Blanch the broccoli florets in boiling water for 2-3 minutes until bright green, then drain and cool in ice water.
3. 3. In a large bowl, combine the cooked pasta, blanched broccoli, and Caesar dressing. Toss to coat evenly.
4. 4. Add the grated parmesan cheese and croutons, then gently mix.
