Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
– 8 oz cremini mushrooms, sliced
– 1 onion, diced
– 3 cloves garlic, minced
– 1 cup sour cream
– 1 cup chicken broth
– 2 tbsp tomato paste
– 1 tsp paprika
– 1 tsp Dijon mustard
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. – Season the chicken with salt and pepper.
2. – In a large skillet, sauté the chicken over medium-high heat until browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
3. – In the same skillet, sauté the mushrooms and onions until softened, about 5 minutes. Add the garlic and cook for an additional minute.
4. – Reduce the heat to medium-low and stir in the sour cream, chicken broth, tomato paste, paprika, and Dijon mustard. Whisk until the sauce is smooth and creamy.
5. – Return the chicken to the skillet and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
6. – Serve the Brazilian Chicken Stroganoff hot, garnished with chopped parsley. Enjoy over rice, pasta, or with a side of roasted vegetables.
Notes
For a richer flavor, use a combination of sour cream and heavy cream. You can also add a splash of white wine to the sauce. Leftovers can be stored in the refrigerator for up to 3 days.
