Ingredients

– 2 large avocados

– 4 medium potatoes

– 1/2 cup red onion, diced

– 1/4 cup fresh cilantro, chopped

– 1 lime, juiced

– Salt and pepper to taste

– Optional: diced tomatoes or corn for extra flavor


Instructions

1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes.

2. 2. Drain and let the potatoes cool before peeling and dicing.

3. 3. In a large bowl, mash the avocados with lime juice, salt, and pepper.
