Ingredients
– 2 cups grated zucchini
– 1 egg, lightly beaten
– 1/4 cup all-purpose flour
– 1/4 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons olive oil
– 1 cup plain Greek yogurt
– 1 tablespoon lemon juice
– 1 clove garlic, minced
– 1/4 teaspoon salt
Instructions
1. – In a large bowl, combine the grated zucchini, egg, flour, Parmesan, 2 cloves of minced garlic, salt, and pepper. Mix well.
2. – Heat the olive oil in a large skillet over medium heat.
3. – Scoop heaping tablespoons of the zucchini mixture and flatten them into patties. Carefully add the patties to the hot oil and fry for 2-3 minutes per side, until golden brown.
4. – Transfer the fried zucchini fritters to a paper towel-lined plate.
5. – In a small bowl, mix together the Greek yogurt, lemon juice, 1 clove of minced garlic, and 1/4 teaspoon of salt.
6. – Serve the warm zucchini fritters with the garlic yogurt sauce on the side for dipping.

– For best texture, be sure to squeeze out as much moisture from the grated zucchini as possible before mixing the fritter batter.
