Description

This comforting and quick Winter Minestrone Soup is packed with a variety of vegetables, beans, and Italian-inspired flavors. It’s a nourishing and satisfying meal that comes together in just 5 minutes.


Ingredients

– 1 can (15 oz) diced tomatoes

– 1 can (15 oz) kidney beans, drained and rinsed

– 2 cups low-sodium vegetable broth

– 1 cup diced carrots

– 1 cup diced celery

– 1/2 cup diced onion

– 2 cloves garlic, minced

– 1 tsp dried oregano

– 1 tsp dried basil

– Salt and pepper to taste


Instructions

1. – In a large pot, sauté the onion, garlic, carrots, and celery over medium heat for 2-3 minutes, until softened.

2. – Add the diced tomatoes, kidney beans, vegetable broth, oregano, and basil. Stir to combine.

3. – Bring the soup to a simmer and cook for 5 minutes, or until the vegetables are tender.

4. – Season with salt and pepper to taste.

5. – Ladle the soup into bowls and serve hot, with crusty bread on the side if desired.

Notes

For a heartier meal, you can add cooked pasta, diced chicken, or extra beans to the soup. The soup can also be made in advance and stored in the refrigerator for up to 4 days.
