Description

Indulge in the soft, chewy texture of homemade mochi dough wrapped around a fresh, juicy peach for a delightful 20-minute treat. These Whole Peach Mochi are a perfect snack, dessert or anytime enjoyment.


Ingredients

– 1 cup mochiko (sweet rice flour)

– 1/4 cup sugar

– 1/4 cup water

– 2 ripe peaches, pitted and sliced


Instructions

1. – In a microwave-safe bowl, combine the mochiko and sugar. Add the water and stir until well mixed.

2. – Cover the bowl with plastic wrap and microwave for 2 minutes. Stir the mixture, then microwave for another 1-2 minutes until the mochi is soft and pliable.

3. – Dust a clean work surface with more mochiko. Transfer the mochi dough to the surface and knead briefly until smooth.

4. – Take a small piece of mochi dough and flatten it into a circle. Place a peach slice in the center and wrap the mochi dough around it, sealing the edges.

5. – Repeat with the remaining mochi dough and peach slices.

6. – Serve the whole peach mochi immediately or chill in the refrigerator until ready to enjoy.

Notes

For best texture, use ripe, juicy peaches. You can also try different fruit fillings like mango or strawberry. Store any leftovers in the fridge for up to 3 days.
