This White Bean Chicken Chili is a quick, easy, and incredibly flavorful dish that’s perfect for a weeknight dinner. Packed with tender chicken, creamy white beans, and a blend of spices, it’s a comforting and satisfying meal that’s ready in just 30 minutes.
Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 2 (15 oz) cans white beans, drained and rinsed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tsp chili powder
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp cayenne pepper (optional, for heat)
– 1 (15 oz) can diced tomatoes
– 2 cups chicken broth
– Salt and pepper to taste
– Chopped cilantro, for garnish
Instructions
1. – In a large pot or Dutch oven, sauté the onion and garlic in a bit of oil over medium heat until softened, about 5 minutes.
2. – Add the cubed chicken and cook until lightly browned, about 5-7 minutes.
3. – Stir in the chili powder, cumin, oregano, and cayenne (if using). Cook for 1 minute to toast the spices.
4. – Pour in the diced tomatoes, white beans, and chicken broth. Bring to a simmer and let cook for 15-20 minutes, until the chicken is cooked through and the flavors have melded.
5. – Season with salt and pepper to taste.
6. – Serve hot, garnished with chopped cilantro. Enjoy!
Notes
– For a creamier chili, you can partially mash some of the white beans against the side of the pot.
– Customize the heat level by adjusting the amount of cayenne pepper.
– This chili is even better the next day, so it makes great leftovers!
