Ingredients
– 1 lb ground turkey
– 1 onion, diced

– 1 can (14.5 oz) diced tomatoes
– 4 cups low-sodium chicken broth
– Salt and pepper to taste

Instructions
1. – In a large pot or Dutch oven, cook the ground turkey over medium heat until browned, 5-7 minutes. Drain any excess fat.
2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until the onion is translucent.
3. – Stir in the taco seasoning and cook for 1 minute to toast the spices.
4. – Add the black beans, corn, diced tomatoes, and chicken broth. Bring the soup to a simmer and let it cook for 15-20 minutes, stirring occasionally.
5. – Taste and adjust seasoning with salt and pepper as needed.
